A very ABC Muffin Tin Monday!!
This weeks theme for Muffin Tin Monday was Letters of the Alphabet. We stuck to the letters A,B and C for today's lunch. Emily was very excited to get her favorite Cookie Monster Alphabet Cookies for lunch!!
Here is Emily's ABC Muffin Tin
Top Row: Cookie Monster Alphabet Cookies, Blueberry Applesauce, Cheddar Bunny Crackers
Bottom Row: Alphabet Soup
Emily liked dipping her cookies in her blueberry applesauce.
The Blueberry applesauce was her favorite!!
Emily loves to have soup for lunch. I don't like that the cans of soup have so much sodium in them so I decided to make my own...it is really simple and I love that I know exactly what is going into it!!
Easy Alphabet Soup
- 1 can reduced sodium chicken or vegetable broth
- Alphabet pasta ~ or your favorite type of pasta (Emily loves tri-color tortellini too!)
- Frozen mixed vegetables
- Parmesan Cheese
Bring the broth to a boil, add in as much pasta and vegetables as you like, I usually add extra because Emily prefers more pasta and veggies and less broth. Boil till pasta and vegetables are tender about 7 minutes.
Top with Parmesan cheese and enjoy!!
